Bengali Ghugni Chat Recipe With Special Dum Aloo


Ghugni is a well-known chat in Bengal. A simple chat with some amazing spicy twist can blow your mind.

Like fuchka, you can find ghugni many were in Kolkata and of course at a pocket-friendly price.

This is a recipe which is made by the dried peas then lastly the twist of tamarind chutney and the coriander leaves make the dish more heavenly.

Sometimes spicy and sometimes sweet every kind of street foods are there.

Indian masalas are worldwide famous no doubt in that.


This is a place where a simple combo of red chilli powder and cumin powder can make a dish amazingly tasty.


Ghugni is a well-known recipe which is usually made in the home to have with parathas.

But here I’m gonna share the Bengali ghugni chat recipe which serves as an evening snack or chat. You can have this with or without bread. With bread, it can be a good breakfast as well or else you can have it simply as a chat.


So, For This Bengali Ghugni Chat The Ingredients We Need


  • Dried or yellow peas
  • Make a paste by onion tomato ginger garlic and green chillies ( for this use 1 onion and 1 tomato and 3-4 green chillies and take ginger garlic paste around 1-2 tablespoon)
  • 1 Chopped Onion
  • 2-3 chopped green chillies
  • Red chilli powder
  • Homemade chat masala (roast red chilli powder, cumin powder and coriander powder together) find out the full homemade chat masala recipe here
  • Cumin powder
  • Salt to taste
  • Turmeric powder
  • Tamarind water or pulp
  • Coriander leaves
  • Sugar for taste
  • Oil
  • Garam masala
  • Bhujia( optional)




Soak the peas in water overnight or for 4-5 hours and then boil it properly but not too much. Then heat some oil in the pan and add chopped onions and saute for sometime. Add the mixed paste of onion, tomato, garlic, ginger and chillies and saute well till the raw smell of the masalas gone. Add the red chilli powder, turmeric powder, cumin powder, garam masala and salt to taste then mix them well and cook for some time. Remember we have also added chilli paste in it so adjust the red chilli powder Add the boiled peas and mix everything well and allow it to cook for 4-5 minutes. You have to add peas with the water so that it can make a gravy consistency. Then add the homemade masala and mix well. Now, your ghugni is ready.


Now I will tell you how to serve it in a proper chat way.


Serve the hot ghugni in a bowl and add some coriander leaves. Add some tamarind water ( just soak some tamarind in water and make a watery consistency mixture) then add some black salt and some chopped green chillies and some chat masala for extra spiciness. Now, your Bengali ghugni chat is ready to eat.


You have it with some bread. Just toast some bread and have it with the hot ghugni in the same way.

The tamarind water will give the recipe the proper chat flavour so don’t skip that if you want to have the real chat recipe.


In Kolkata, near to my house, there is a special ghugni and dum aloo stall is available. Their recipe is so amazing and special and the way they make the recipe it’s really amazing.

The speciality of their recipe is they make dum aloo and ghugni separately then they serve them together with the tamarind water and chat masala.


So, you can also make in the same way for some more fun.

What you can do is you can make dum aloo then mix it with the ghugni and serve it hot.

For The Special Dum Aloo Chat, We Need


  • Some boiled baby potatoes
  • Garlic and ginger paste
  • Green chilli paste
  • Tomato puree
  • Onion paste
  • Red chilli powder
  • Turmeric powder
  • Cumin powder
  • Coriander powder
  • Chopped ginger
  • Chopped garlic
  • Black salt
  • Some Maida
  • Oil
  • Salt




Boil the baby potatoes first for 3 whistles and drain the water and pour cold water on the potatoes. This will help you to remove the peel off the potatoes easily. Remove the peel carefully and keep them aside. Heat the oil and add chopped ginger and chopped garlic and saute. Then add ginger garlic paste, onion paste, green chilli paste and the tomato puree. saute them well and allow to cook for 2-3 minutes. Then add the red chilli powder, turmeric powder, cumin powder, coriander powder and give a good mix. After that, add the boiled baby potatoes and mix everything well. Add salt as per requirement. Make a mixture of maida/ refined flour and water and add to the pan for a gravy kind of texture. Cover the pan and cook for some time.

Serve it hot with or without the ghugni in the same way. Just serve the dum aloo and the ghugni in a bowl and add some black salt, some chat masala and some tamarind water.

You can also have only the dum aloo in the same way.

Have it with parathas or bread. You will get to know how amazing a simple Indian dish can be.


So this is it, have ghugni with dum aloo or simply have Bengali ghugni chat and special dum aloo with the twist of tamarind and chat masala.
